I tried this soup twice today. The first time it was like eggs in water. The second time it was like creamy water - it wouldn't thicken. I'm pretty bummed out because the smell was fantastic.

I made this soup a few weeks ago, and while the smell was absolutely incredible, I think the eggs "broke" (is that the right word?) because it was basically like a really runny omelette. I'm not an awesome cook yet, but I felt really discouraged after this epic fail.

I made this with 2 "Festival" squash (They are shaped like an acorn squash, but brightly colored and striped) Cut and baked upsidedown in a bit of water, and then flipped and filled with 1c. frozen corn, thawed; some sauteed finely diced onion; some garlic-herb seasoning; pour over 2 beaten eggs mixed with 1/2 cup milk; Baked until set, topped with some grated marble-jack cheese. It was WONDERFUL!!!

A twist on the classic, I use crisp brown rice cereal slathered in a decadent peanut butter maple syrup sludge. This version of treats has bits of chopped, toasted pistachios throughout - also vegan (no marshmallows) and gluten-free.

This is another favorite - I cook up lots of broccoli, then puree half of it into a pesto. The other half is cut into little florets. Toss the broccoli with some quinoa, sliced avocado and a drizzle of feisty chile pepper oil, and you've got a nice meal on your hands.
