Franklin Inn Mexican Restaurant Chilquilles—A baked casserole made with delicious layers of chorizo (an exclusive spicy Mexican hot sausage made just for the Inn), sour cream, Jack cheese and tomato sauce. It’s kinda like a Mexican Lasagna. You can order it this weekend at the Inn.

At least 25 years ago, I was told by a client that the Franklin Inn was the only restaurant in the Pittsburgh area that served "real" Mexican food. A friend who had relocated from California and I made the trip across town on a cold winter night - it was fantastic! My interest was renewed recently, and this will be our... second visit in 2 months! From a patron who was having trouble posting it himself:

We were in Puerto Vallarta, Mexico, on vacation, about 12 years ago. We couldn't find a decent Mexican restaurant anywhere close to our resort. We made an international phone call to Jessi Baker, a long time customer of the Franklin, and good volleyball friend of ours. She had talked about it before and and we never got around to looking into it. So, while at the resort we got on my laptop and went to Google Earth. We found the coordinates for the Franklin Inn. We then chartered and early morning flight and flew into Pittsburgh that Saturday morning. We transferred to a helicopter at the airport (Don't you remember a really, suddenly windy day, 12 years ago?...That was us landing our chopper in the parking lot!) and flew to the restaurant. We made it by lunchtime. Nan had the chicken tacos and I had the (ground) beef burrito. Wedding soup was the soup of the day (I remember this like it was yesterday!). It was delicious. So, as always, there is a moral to this story. You really can't get good Mexican food in Mexico! You can only find it, in Franklin Park, PA., at the Inn.
