Santa Fe Bean Dip

Makes 18 servings
Prep time: 20 minutes
Baking time: 30-40 minutes

  • • 3 15-1/2 oz. cans pinto beans, drained, rinsed, and drained again
  • • 1 8 oz. package cream cheese, softened
  • • 3 cups (8 oz.) Heluva Good! Sharp Cheddar Cheese, shredded
  • • 1 14 oz. container salsa (hot or mild, according to your tastes)
  • • 1/2 teaspoon ground cumin
  • • 1 teaspoon salt
  • • 1/4 teaspoon black pepper

  • 1. Preheat oven to 375 F. Lightly oil a two-quart casserole.
  • 2. In a food processor, combine two-thirds of the beans, cream cheese, 2 cups of the shredded cheddar, 1 cup of the salsa, cumin, salt and pepper. Process to a smooth puree. Transfer to a large bowl and stir in remaining whole pintos. Spoon into a prepared casserole and level. Top with a thin layer of the remaining salsa and shredded cheese.
  • 3. Bake 30-40 minutes, or until hot and bubbly. Remove from the oven and let set five minutes. Serve with tortilla chips.

Cheeseburger Sliders

Makes 12 sliders

  • • 1 pound lean ground beef
  • • 2 Tbsp. Heluva Good! White Cheddar & Bacon Dip plus additional for garnish
  • • 12 slices Heluva Good! Sharp White Cheddar Cheese
  • • 3/4 cup white mushrooms, sliced
  • • 2 Tbsp. butter
  • • 12 dinner rolls
  • • 12 slices crisp cooked bacon
  • • Lettuce, tomato and red onion for garnish

  • 1. Mix 2 Tbsp. Heluva Good! White Cheddar & Bacon Dip into hamburger then place on cutting board, pressed to be 2 inches thick. Take a 2 inch round cookie cutter and cut out slider patties.
  • 2. Seperately, in a saute pan, saute mushrooms in butter over medium heat until slightly browned.
  • 3. Take 12 slices of cooked, crisp bacon, and cut into halves, set aside.
  • 4. Prepare barbecue. Grill burgers to desired doneness and top each with a slice of Heluva Good! Sharp White Cheddar Cheese.
  • 5. Place burgers on rolls and garnish each with mushrooms, 2 half slices of bacon, lettuce, tomato, red onion and an additional dollop of Heluva Good! White Cheddar & Bacon dip.
