no, the chef is not a politician! if anything, he is an activist. and for an issue we all need to pay much more attention to. the fact that the first lady has taken the cause as her own should be applauded whether you are a dem or rep. i hate to say it, but the only way for nutrition to get the awareness it needs is to attach itself to a powerful, visible platform, and what better platform than the white house.

I used to do that, till I got tired of inferior product. Don't know where you are geographicaly, but if possible, try to make a deal with a local farmer and buy directly from him. I live in Nebraska and after a year of garbage, I did just that. You won't believe the improvement! Better taste, durability, cheaper and the guests NOTICE the difference, not just us chefs!

Of course they will. I am at one of the premiere country clubs in the area and that range is about what we offer. However, many of our "long-time" members still want that hot beef sandwich! I have to offer high end as well as basic fare. Warren Buffet is a member at our club and even he does not eat from the "high" end.

I "choose" salty, fatty, bad for you, fattening, full of cholesteral food. The "healthy" eaters are the minority. I have stuff like that on the menu at my country club, but it only accounts for .03 percent of my monthly sales! This is the self-rightous media pushing this agenda. People, REAL people, eat REAL food! If I had to live on what THEY say we should eat, I would consider moving to Mexico where they don't care!

Thank you for a moving presentation. I'm reminded of how frequently restaurants meet the needs of my family. Sometimes we're traveling but more frequently for recreation or just because we scheduled something else and don't have time to cook. Restaurants are such a pervasive part of our lives that we almost take them for granted.
