I cooked fish tonight-a very fresh fish, that, I'm sure of. Dinner is now finished and I still smell the hot seared fish odor. Not bad, not fishy per se, but not welcome. The reason I detect the odor is because I cook with a downdraft. A downdraft ventilation method is not ideal for any type of searing and, of course, ...tall pots. There have been some improvements in downdrafts in terms of taller pop-up rear vents. But, here's the point:
If you can, plan for a hood, NOT a downdraft. Trust me on this. It's about the quality of the air in your home. Here is good information...please comment if you own a downdraft or are thinking of owning one.

I'm curious...any epiphanies from days with guests at your home, or just on Thanksgiving day, now that you think back on how the kitchen and surrounding spaces functioned? For me (and fortunately my husband) the deal is sealed that we need to remove the wall between the kitchen/dining room and open up the entire main f...loor for a loft-like feeling. Must do!
