Susan Serra Associates, Inc. I cooked fish tonight-a very fresh fish, that, I'm sure of. Dinner is now finished and I still smell the hot seared fish odor. Not bad, not fishy per se, but not welcome. The reason I detect the odor is because I cook with a downdraft. A downdraft ventilation method is not ideal for any type of searing and, of course, ...tall pots. There have been some improvements in downdrafts in terms of taller pop-up rear vents. But, here's the point:

If you can, plan for a hood, NOT a downdraft. Trust me on this. It's about the quality of the air in your home. Here is good information...please comment if you own a downdraft or are thinking of owning one.

Downdraft segues nicely with my evolving vision of the "dream" kitchen. Nice lines. Open. No shadows, capable of being brilliantly lighted.

Otherwise, you're causing me to have flashbacks of K Paul's Kitchen on Royal Street and blackened red snapper topped with crawfish etouffee.

It's snowing in Louisiana... can you see yourself seated by the window on Royal Street, having dinner and watching it snow? :)

Michael, hopefully not too late. Did you know that K Paul's had a restaurant in New York City? It was downtown and at the time, way back, you could barely get a reservation. I ate there a couple of times...LOVED it!

But, a downdraft....don't go down that road if you don't have to.

I'm curious...any epiphanies from days with guests at your home, or just on Thanksgiving day, now that you think back on how the kitchen and surrounding spaces functioned? For me (and fortunately my husband) the deal is sealed that we need to remove the wall between the kitchen/dining room and open up the entire main f...loor for a loft-like feeling. Must do!

We visualized our existing lifestyle as it might be in the future. Did you?

I'm adding to my local online grocery order item by item to be delivered tomorrow between 6 and 8 am..perfect timing. Marcy, sounds like you're ready for a great Thanksgiving! I don't mind picking a few things up here and there the day before, but all too often I've done the big shopping even late the day before. I'm more prepared this year too. Enjoy that food and family!

Susan Serra Associates, Inc. Tell me about your Thanksgiving prep and your kitchen. Are you prepared? Do you feel organized? Are your countertops cluttered? Somehow that came quickly to mind, which normally doesn't for me, but with cluttered countertops, the flow of the cooking process is very disrupted. Take a look at your kitchen countertops tom...orrow.

What about serving dishes...will you be gathering them together in one spot tomorrow or shortly thereafter? Don't forget serving utensils too...put them all aside. Tell me your methods of organizing for Thanksgiving!

Abbey, it sounds like a lot of fun and another organized Thanksgiving prep! Key lime pie, yum! Apple crisp, double yum! Funny, I make my kids measure out all ingredients too. My niece let the cat out of the bag that the key lime pie was indeed just regular lime pie. The meal was great but it's WAY too much work.
