PUMPKIN BARS with NO REFINED SUGAR: I've gotten several requests for this recipe. So long sweetened condensed milk. This is a great way to keep the pie off your thighs this holiday season. Thanks to Melissa Schenck for sharing it!

Pumpkin-Carrot Bars
1 cup canned pumpkin
1 cup shredded carrots
1/2 cup honey
1/3 cup drie...d cranberries or raisins
1/4 cup canola oil
2 large eggs
1 cup whole wheat flour
1 tsp baking powder
1 tsp cinnamon
1/2 tsp baking soda
1/4 tsp salt/ 1/4 cup shelled pumpkin seeds or walnuts
Oven at 350 degrees, 9x13 pan coated with cooking spray/oil.

In large bowl combine the first 6 ingredients, mix until well blended. Add the next 5 ingredients to the bowl, mix until well blended. Add nuts if desired. Pour into pan, spread evenly. Bake for 22 to 25 minutes. Cool in the pan completely.
If you want to make it extra healthy, you could add wheat germ or flax seed and you can add 1/4 cup applesauce and 2 tbsp of canola oil in replacement of the 1/4 cup canola oil.

If you really need some sweetness, white chocolate chips are a nice mix in as well.

Why is the YMCA closed on Thanksgiving? On a day where most people eat 4-5 times the number of calories of a normal day, the Y should not only be open but encouraging members to work out, certainly not closing the doors on us. Since I stopped working weekends and Holidays 15 years ago, I've never not worked out on Th...anksgiving morning. Lifetime Fitness is open 5 am to 3 pm and LA Fitness is open 8 am to 2 pm :-(Read More

We reviewed what we call "access reports" which tells us the number of Members who visit the YMCA on a given day. Considering the shortened hours for the holiday already, the number of Members who visited was low. Our intent was certainly not to disappoint or... Read More frustrate you, but to provide members and our staff time to spend with their families and friends for the Thanksgiving holiday.

To make the weekend special, we have created a "Take the Pie Off Your Thighs" Open House so you can bring friends and family members to the YMCA on Friday, Saturday and Sunday. You won't need to use any of your guest passes. Just remind your guests to bring a photo ID.

Be assured that our YMCA management team will take your comments into consideration for the future. Thanks for letting us know.
