PUMPKIN BARS with NO REFINED SUGAR: I've gotten several requests for this recipe. So long sweetened condensed milk. This is a great way to keep the pie off your thighs this holiday season. Thanks to Melissa Schenck for sharing it!
Pumpkin-Carrot Bars
1 cup canned pumpkin
1 cup shredded carrots
1/2 cup honey
1/3 cup drie...d cranberries or raisins
1/4 cup canola oil
2 large eggs
1 cup whole wheat flour
1 tsp baking powder
1 tsp cinnamon
1/2 tsp baking soda
1/4 tsp salt/ 1/4 cup shelled pumpkin seeds or walnuts
Oven at 350 degrees, 9x13 pan coated with cooking spray/oil.
In large bowl combine the first 6 ingredients, mix until well blended. Add the next 5 ingredients to the bowl, mix until well blended. Add nuts if desired. Pour into pan, spread evenly. Bake for 22 to 25 minutes. Cool in the pan completely.
If you want to make it extra healthy, you could add wheat germ or flax seed and you can add 1/4 cup applesauce and 2 tbsp of canola oil in replacement of the 1/4 cup canola oil.
If you really need some sweetness, white chocolate chips are a nice mix in as well.Read More

Why is the YMCA closed on Thanksgiving? On a day where most people eat 4-5 times the number of calories of a normal day, the Y should not only be open but encouraging members to work out, certainly not closing the doors on us.
