Google the Venetian and go to their gondola link. There normally is a pretty long wait list, but the outdoor rides may be more available because of the hot summer weather.

Took Gondola ride a few years ago after attending wedding. Very authentic (having been to Venice before), don't know about this dinner gondola though...

Probably still red hot in Sept, 100+, evening cooling off to a balmy low 90s? Thats what it was like in August anyway....but it's a DRY heat! LOL! Have fun! You won't notice the heat too much.
