Abigail is right. We use a special 'bomba rice' from Calaspara that is known to absorb flavor better than other rices. The rice is cooked in a traditional paella pan on a grill. We use saffron, wood-roasted piquillo peppers, olive oil and then add either chicken, vegetable, or seafood to the paella.
