Chocolate 101 + Baking: On Thursday, November 12th, from 6:30 to 8:30 pm, Shawn Askinosie will teach a class at the Askinosie Chocolate factory on making and tasting chocolate. The students who sign up for Shawn’s Chocolate 101 class will learn about bean to bar chocolate making process, tasting every step of the way. ...Students will taste cocoa beans, cocoa butter, cocoa powder, chocolate liquor and the finished bar.
In addition to our regular Chocolate 101 course that night, we will also be teaching students how to bake with our chocolate! There will be 3 separate demonstrations on: the Askinosie Chocolate Cake, Chocolate Frosting, and the Askinosie Flourless Chocolate Walnut Cookie. These recipes are all great ideas for holiday treats!
Demonstration 1: Askinosie Chocolate Cake-- Students will taste the Askinosie Chocolate Cake formulated by home baker Carrie Goswick. Carrie will talk about her cake and discuss what sets Askinosie Chocolate Cocoa Powder apart from the rest. Students will learn the difference between alkalized and non-alkalized cocoa powder. We'll also demystify dutch processing.
Demonstration 2: Chocolate Frosting—We will show students how to make the perfect chocolate frosting. We will make two different kinds of frosting: one made with Askinosie Chocolate Cocoa Powder and one made with Hershey’s Cocoa Powder. Students will have a chance to “lick the spoon” by tasting and comparing both kinds of frosting.
Demonstration 3: Askinosie Flourless Chocolate Walnut Cookie— This special cookie is made by a James Beard award-winning chef for her restaurant in Santa Fe, New Mexico called Pasqual’s. We will share this unique recipe with you and hand out cookies for you to take home and enjoy.
At the end of the class students will receive hard copies of all of the recipes discussed during Chocolate 101.
Chocolate 101 is a required course for all chocolate lovers. The cost of registration for Chocolate 101 is $25 for one ticket, or $40 for two tickets. Cancellations must be within 48 hours of event for refund because these classes do sell out.
