I used to be involved in both the hop industry (Hop Inspection Supervisor) and barley breeding (WSU Barley Breeding Program) and I love how broad the topics are on the show.. Scott Watti McGinnis OK tonight I bottled an amber ale with smoked apples and on the secondary's yeast cake I poured 5 gals of cider and cherry juice. then as I was drinkign an Orval I poured the dregs in the fermentor.

Am I nuts?

OK I feel the need to clarify and clense my soul.

The beer was a amber ale to which I added 8 smoked apples over apple chips on my grill.

I fermented on with English Ale yeast in primary and in the seconday I added Hefe yeast.... Read More

At bottleing I left smoked apples in the secondary carboy and poured 4 gallons of cider and one gallon of pure cherry juice. As i was enjoying the Orval I tossed the dregs in.

It's my Franken-Cider.

After another taste I think it a lot like a sourish wheat beer.

I'm thinking of flavouring them. Has anyone bulk aged and then
flavoured a mead before? and if so any tips or particular flavours that

I just listened to my interview with Greg on water from June of 2006. What an incredible conversation. I was really intimidated going into the interview, because I knew very little about water chemistry (still the case), but Greg put me at ease with his down-to-earth explanations. My favorite quote: "Don't get your shorts in a knot unless you have a problem."

Daniel Aleksander Blonarowycz Just made a cherry wheat wit extract beer. It was not so cherry tasting after the primary. so I added 4 lbs. of frozen dark sweet cherries to the secondary and primed with cherry juice reduction. Turned out so well that within a couple of days it was gone. Only problem now is finding cherries to make another batch. Maybe the next batch I'll make it a sour beer.

I also had a very successful batch of beer only using 5 lbs. of frozen dark sweet cherries for the cherry flavor. I found my cherries at a local bulk food store. I used mine for a cherry porter. They worked very well!
