Capilano Honey

Capilano Honey Pancakes for breakfast are a very special treat and this special Capilano recipe, ohh yeah, pancake heaven!

Ricotta & Honey Hotcakes

Preparation: 10 minutes
...Cooking: 20 minutes
Serves: 4
To save time at breakfast, make batter the night before. Store, covered, in the fridge.

Ingredients:
375g low-fat smooth ricotta
2 tablespoons CAPILANO honey
3/4 cup low-fat milk
4 eggs, separated
1 cup plain flour
1 teaspoon baking powder
Cooking oil spray
1 cup fresh or frozen blueberries
Grilled bacon, to serve
Honey Lemon Butter Sauce, to serve (recipe follows)

Method:
1. Place ricotta, CAPILANO honey, milk and egg yolks in a mixing bowl. Whisk to combine. Sift together flour, baking powder and a pinch salt. Stir through the cheese mixture until smooth. Beat egg whites to stiff peaks, using an electric mixer. Lightly fold through batter.
2. Preheat oven to 100°C. Place a large, non-stick frying pan over moderate heat. Lightly spray with oil. Drop 2 tablespoons batter at a time in pan. Cook for 1 minute. Dot with a few berries. Flip over. Cook until cooked through and golden.
3. Stack hotcakes as they cook on a tray in warmed oven. Serve with bacon and Honey Lemon Butter sauce.

        Capilano Honey

        Capilano Honey Drizzle Capilano honey on this delicious dessert. Quick and easy, it will have you licking your lips!

        Honey Berry Cream

        Preparation time: 7 minutes
        ...Serves: 4

        Ingredients:
        3 tablespoons CAPILANO Honey
        250 light cream cheese
        250 grams fresh or frozen mixed berries
        4 crushed chocolate chip biscuits (OPTIONAL)
        1 extra tablespoon CAPILANO Honey for drizzling

        Method:
        1. Mix honey through cream cheese quickly until combined.
        2. Using half the berries place a spoonful of berries on the bottom of each glass. Divide the honey cheese into each of the four glasses and finish with another
        spoonful of berries and a drizzle of honey.
        3. To make crunchy honey choc-berry cream add the crushed biscuits to the cream cheese and honey before mixing and continue with recipe.

        Notes:
        • For a flavour change use gingernut biscuits and CAPILANO Honey & Ginger. Berries can be replaced with banana, pineapple or mango.
        • Crushed Iced vo-vos make a Turkish Delight Cream with the berries, honey and cream cheese for kids and kids at heart.

        Capilano Honey

        Capilano Honey These sweet little guys will put a smile on your face. Make extra for your kids lunch boxes. Ask kids to decorate them themselves!

        Preparation time: 40 minutes (plus chilling)
        Cooking time: 10 minutes
        Makes: 20
        ...
        Ingredients:
        125g butter, softened
        1/2 cup CAPILANO Honey & Ginger
        1/2 cup dark brown sugar
        1 egg yolk
        2 1/2 cups plain flour
        1 teaspoon bicarbonate of soda
        Queens coloured writing icing tubes
        Sweets, to decorate (we used mini M&Ms, trimmed fruit sticks and candy stars)

        Method:
        1. Using an electric mixer, beat butter, CAPILANO Honey & Ginger and dark brown sugar together in a medium bowl until creamy. Add egg yolk and beat until combined.
        2. Sift flour and bicarbonate of soda together and add to creamed mixture. Stir with a wooden spoon until combined. Use your hands to gather into a firm dough. Knead lightly, then divide into 2 discs. Wrap each disc in plastic wrap and refrigerate for 1 hour.
        3. Preheat oven to 170ºC. Line 2 large baking trays with non-stick baking paper.
        4. Knead one disc until smooth. Roll out on a floured board to 3 mm thick. Use a gingerbread man cutter (we used a 12cm high cutter) to cut shapes. Use a small spatula or butter knife to help carefully transfer the shapes onto the prepared trays 2cm apart. Gather scraps and re-roll to make more shapes.
        5. Bake for 8-10 minutes or until golden, swapping shelves halfway through cooking time. Stand on trays 10 minutes, then carefully transfer to a wire rack to cool completely. Repeat with remaining dough.
        6. Decorate with Queens coloured writing icing tubes. Use small dots of icing to secure sweets. When icing has set, store gingerbread men in an airtight container for up to 1 week.

          Honey Joys

          Makes: 24
          ...
          Ingredients:
          4 tablespoons CAPILANO honey
          1 tablespoon caster sugar
          100 grams butter
          5 cups cornflakes
          24 paper cup cake cases

          Method:
          1. Preheat oven to 160°C.
          2. Melt honey, sugar and butter in a large saucepan on high heat until frothy. Remove from heat and add cornflakes. Mix well until coated.
          3. Spoon into cupcake cases. Place on an oven tray and bake for 10 minutes.
          4. Allow to cool and harden in refrigerator for 30 minutes.

          Notes:
          • Can be made up to two days ahead.
          • Very easy recipe with only one pot and spoon to be washed.
          • Ideal recipe for parents and children to make together.
