Looks wonderful. I'm not surprised, commercial varieties are bred for fast gain not tasty meat. You can improve it by how they are raised but it will still be less flavorful than any heritage breed. Ditto for other species of meat animals & birds.

The heritage turkey is a blue slate and yes, the organic is broad breasted white. Chef Adam wanted me tell you Kade and Jordan are bringing the box you sent them to Kansas to serve up for Thanksgiving. Maybe they will take some pics!

I for sure want pix! :-) Blue slate is a good turkey, be careful though it's really easy to overcook heritage breeds. Midget White was the best in taste tests of Heritage breeds, Bourbon red, royal Palm & Blue slate also all good. From ALBC sponsored tastings w/ chefs & the public voting. But any heritage breed will be more flavorful than a commercial breed even one raised true free range.
