Katie I used to eat CGC every time I could! It was such a treat and I looked forward to when I would buy it and savor it. It was just perfect: the taste, the texture, the consistency.....Sadly, I have since become lactose intolerant!! It is horrible for me and I have horrible cravings for your chevre! Is there any cheese tha...t your company makes that gears towards us lactose intolerant folk? If not, would there be a chance of their being lactose-free CGC cheese in the future??

Hi Katie,

That is a sad story. Since all dairy products contain some level of lactose, we do not know of nor have plans to make a lactose free cheese. Have you tried one of the lactase supplements to help you digest dairy? We hear of a lot of people having good luck with those.

A couple facts about goat milk cheeses and lactose for you to consider:... See More
1. In general, goat's milk contains about 15% less lactose than cow's milk.
2. In our fresh and soft-ripened cheeses, we (as do most domestic goat cheese manufacturers) use an acid ripening process that expels even more lactose. Thus, these styles of goat cheeses contain the least amount of lactose when compared to cow and sheep milk cheeses.
3. Lastly, the molecular makeup of goat milk is similar to human mother's milk adding to ease of digestion.

I'm not suggesting you or anyone else throw caution to the wind, ignore an adverse food condition diagnosis and go out and eat a pound of goat cheese. Each person is different and anyone diagnosed with any food condition should consult a doctor before making any changes to their diet.

But with that disclaimer, I will say that I know of a number of people who are unable to eat cow or sheep milk cheeses who have no problems with goat milk cheese.

Andy I used to live on the corner of 11th and N St (from 2003-2007) and now I run the Specialty department (which includes cheese) in the downtown Whole Foods of Salt Lake City and I love getting people interested in your cheese. :) "I used to pick blackberries right out in front of their base of operations" is what I enjo...y telling people. Makes me miss Arcata too often, but it's fun to share Arcata with the people out here.

Kelley - all our cheeses are diabetic friendly assuming the lack of sugar is what you mean. As for low-fat.... well cheese and low-fat is somewhat of an oxymoron. An ounce of fresh chevre is 70 calories and 50 of those calories from fat. That said, if you compare our fresh chevre with the cow's milk equivalent of cream cheese, you will see our ... See Morechevre has significantly less fat, more protein and half the cholesterol. Let's call it a "lower" in fat and much more delicious and complex tasting substitute to cow's milk cheeses.
Our aged cheese don't have much more fat than the fresh chevre btw. It is almost a push. And depending on the use you have in mind for the cheese, an ounce or two will go a long way in satsifying your palate. So although the fat content is high on a percentage basis, your total fat intake for a couple of ounces won't break the bank. See what I mean?
As for where you can find our cheeses in HumCo, both co-ops, Wildberries, Eureka Natural Foods, Murphy's Sunnbybrae and sometimes Safeways.

I appreciate your answer, What I LOVE about your product is the lactose intolerant can use it and the fats seem to break down differently that a cow based product, in my unscientific opinion. For example where cow based cheddar will make my blood sugar spike and do other unpleasant things :>O your sheep based cheddar did not! I Guess I was wondering if the cheddar you make had less fat, or which of your fabulous amazing cheeses was "better" for a diabetic than others? Or research behind sheep and goat based product being a more user friendly fat. and then there is the whole cholesterol thing... All issues for well behaved diabetics ;>)

I have a occasional hankering for a great and I mean *GREAT* mac and cheese, of your cheese toasted on a good slice of brio bread to a nice bit of the chevre with fresh raspberries atop homemade carrot cake (homemade organic apple butter or cooked pumpkin substituted for oil/butter) I may be diabetic, but I am learning that this is not the kiss of death for flavor and nice palate choices. The challange often becomes that manufacturers add fat to substitute for the loss of sugars and substitute sugars for the loss in fats and call that "no sugar added" or "fat free" which we diabetics find annoying as we have to deal with spikes in blood sugars when we are not cautious. As a diabetic with gourmet tastes I often find myself reading more lables than I should have to. Ja know?

BOB! Hey bob, I remember you!, we have met before, last year, at the factory, over large wheels of fabulous sheep's milk cheddar cheese and the co's giving community spirit! I was a volunteer for a non profit, with a rather large truck to my avail. Tiss when I became a avid sheep/goat cheese fan actually.
