Vegan Pumpkin Bread is soooo good! I used pecans and LOVED it.
(In case you were curious, I also tried a separate batch with gluten-free flour....it's....different. Didn't hold together very well and did not have the same bread-like texture.)

I was just reading your autumn favorites and the vanilla bean rice pudding looks absolutely delicious. I am wonder have you every tasted Le Pain de Quotidien's rice pudding. It's brown rice with soymilk without the cream. I was trying to figure out the recipe on my own...but can't. Maybe you can post a vegan version rice pudding? Maybe...ha. Thanks
