Total Time: 20 minutes
Servings: 2

INGREDIENTS:
2 tsp butter or margarine, softened
1 clove garlic, minced
4 (1/2-inch-thick) slices sourdough bread
1 package (10 oz.) Morningstar Farms® Hickory BBQ Riblets
2 slices pepper jack cheese, halved diagonally
2 lettuce leaves
2 thin sliced red onion, separated into rings

DIRECTIONS:
1. In small bowl stir together butter and garlic. Brush one side of each bread slice with butter mixture. Place, buttered side up, on baking sheet. Set aside.
2. Cook Morningstar Farms® Hickory BBQ Riblets according to package directions. Top each riblet portion with two half slices of cheese. Let stand for 2 to 3 minutes or until cheese melts.
3. Meanwhile, broil bread slices 4 to 5 inches from the heat for 3 to 4 minutes or until lightly toasted, turning once. Top buttered sides of two bread slices with lettuce, riblet portions and onion. Top with remaining slices of bread, buttered sides down. Cut into halves. Serve immediately.

INGREDIENTS:
1 cup fresh pea pods
1/2 cup shredded carrots
1/2 cup quartered cherry tomatoes
1/3 cup sliced green onions
2 tbsp slivered fresh Thai basil or fresh basil
1/4 cup unsweetened light coconut milk or unsweetened coconut milk*
1 tbsp lime juice
1/2 tsp toasted sesame oil or sesame seeds, toasted
1/4 tsp crushed red pepper
4 Grillers® Vegan Veggie Burgers
1 (9-inch) focaccia, cut into fourths and horizontally split

DIRECTIONS:
1. Lengthwise cut pea pods into slivers. In medium bowl toss together pea pods, carrots, tomatoes, green onions and basil. Set aside.
2. In small bowl whisk together coconut milk, lime juice, sesame oil and red pepper. Drizzle over vegetables. Toss to coat.
3. Cook Morningstar Farms® Grillers® Vegan burgers according to package directions.
4. Serve hot burgers in focaccia, topped with vegetable mixture.
*Note: If your canned coconut milk has separated, place it in a mixing bowl. Whisk until combined before measuring.

ON THE GRILL:
Preheat grill.
Use a food thermometer to be sure patties reach minimum internal temperature of 160° F.

INGREDIENTS:
6 eggs, slightly beaten
1/3 cup milk
2 tsp salt-free Southwest or Mexican seasoning
2 Veggie Sausage Patties
1 cup sliced fresh mushrooms
1/2 cup chopped red bell pepper, green bell pepper or combination
2 green onions, bias-cut into 1-inch pieces
2 tbsp vegetable oil, divided
4 (10-inch) flour tortillas
1/4 cup shredded Cheddar cheese or Monterey Jack cheese (1 oz.)
Salsa or Jalapeño-White Cheddar Country Gravy (Find the gravy recipe here: http://www.morningstarfarms.com/recipe_detail.aspx?id=7882)

DIRECTIONS:
1. In medium bowl beat together eggs, milk and seasoning. Set aside.
2. In 12-inch nonstick skillet, cook and stir MORNINGSTAR FARMS Veggie Breakfast Sausage Patties, mushrooms, bell pepper and onions in 2 teaspoons of the vegetable oil for 2 to 3 minutes or until vegetables are tender.
3. Pour egg mixture over vegetable mixture in hot skillet. Cook over medium heat, without stirring, until mixture begins to set on the bottom and around edge. Using spatula, gently lift and stir partially cooked eggs so uncooked portions flow underneath. Continue cooking and lifting over medium heat for 2 to 3 minutes or until eggs are cooked through, but still glossy and moist. Remove from heat.
4. Spoon about 3/4 cup of vegetable mixture onto each tortilla just below center. Sprinkle with cheese. Fold bottom edge of each tortilla up and over filling. Fold in sides. Roll up from the bottom, completely enclosing filling. Secure with wooden toothpicks.
5. Carefully wipe skillet out with paper towel. Brush with remaining 4 teaspoons oil. Add filled tortillas. Cook over medium heat for 4 to 5 minutes or until golden brown, turning once.
6. Remove toothpicks. Diagonally cut each into halves. Serve with Jalapeno-White Cheddar Country Gravy or salsa.

1 Morningstar Farms® Grillers Prime® Veggie Burger
1 thin slice mozzarella cheese (about 3/4 oz.)
2 tsp reduced-fat or regular mayonnaise
1 tsp pesto
1/2 (5- to 6-inch) focaccia, split, or 1 hamburger bun, split
2 tbsp slivered roasted red bell pepper
2 to 3 fresh basil leaves

DIRECTIONS:
1. Cook Veggie Burger according to package directions. Top hot burger with cheese slice. Let stand for 1 minute or until cheese melts.
2. Meanwhile, in small bowl stir together mayonnaise and pesto.
3. Serve burger in focaccia along with mayonnaise mixture, roasted pepper and fresh basil leaves.
