Cottage Cheese Salad

I love that even at my age I can still learn something new. I had never heard of the phrase "Dinner on the Ground" until a reader, Amanda, wrote to me and mentioned it. I grew up Catholic & I guess we are more 'single food' oriented with our church suppers hosting things like pusharata sales, fish frys and spaghetti dinners to name a few - so the expression 'dinner on the ground' was a first for me! 

 

Amanda also shared her version of a classic Dinner on the Ground recipe for Cottage Cheese Salad and agreed to let me pass it on to y'all. Some people call this pink salad, or pink fluff, and I'm sure there many are other names for it. Amanda is a reader here too, and a fellow South Mississippian - stay safe this weekend Amanda! And, she's agreed to share some more Dinner on the Ground recipes with us too on down the line - yay!!

 

I hadn't thought about this salad in forever, so it was a nice reminder. Whip one up for your Labor Day cookout!

 

Cottage Cheese Salad

16 oz. cottage cheese

3 oz. strawberry Jello

16 oz. Pineapple chunks, drained

4 oz. Cool Whip

1/2 c. chopped pecans (optional)

 

Add dry Jello to cottage cheese and stir. Add fruit. Fold in Cool Whip. Add nuts either in or on top of salad. Refrigerate 1 hour before serving
