Pumpkin Bread

Place rack in center of oven and preheat to 350.

 

3 cups sugar

1 cup vegetable oil

2 cups fresh pureed pumpkin (substitute 1 can Libby's 100% pure pumpkin 15 oz. Not pie filling.)

4 eggs

1 tsp salt

2 tsp cinnamon

1 tsp ground nutmeg

1 dash ground cloves

2/3 cup orange juice

3 & 1/2 cups flour (I only use King Arthur) mixed with 2 tsp baking soda

You may add raisins and chopped pecans if you like. I don't add them.

 

Spray three 9x5x3 inch loaf pans with cooking spray. Combine ingredients, blending well. Add raisins and pecans if desired. Pour into loaf pans and bake at 350 degrees F, 50-60 mins until a toothpick comes clean. Cool in pans on rack for 15 minutes before removing. Wrap in foil while still warm. They freeze for up to 60 days very well.
