Duo Hotel Boutique announces the incorporation of the young 27 year old chef Javier Paredes Núñez.

Javier ´s menu possesses a wide variety of ingredients. He has a knowledge of a large diversity of fishes and seafood as well as Peruvian, French, Spanish, Asian, Italian and Mediterranean Cuisine.

Javier has developed his talent in the most important restaurants of the city such as Segundo Muelle, Bravo, Hervé Bistro and Bodega de la Trattoria.
At Duo, he has created an innovated Peruvian Fusion Cuisine menu with the basis of his research and the acquired influences from Arequipa and Piura, places where he grew up. And after an adventure of exploration of the main local markets , he decided to mix the aromas of chincho, paico sachaculantro with meats such as alpaca, ostrich and seafood garnished with the widely known Peruvian potatoes, yucas, vegetables and the traditional rice.

Always taking special care of his products, Javier changes items on the menu each day, proposing different options to our guests and visitors and dishing up our Perú Sandwich, Tiradito Duo, Prawns al Panko with guacamole and teriyaki sauce, Rissoto of Lomo Saltado and the well-known Tartare Duo.
