MUSN’T GROUSE
Now that the smoke has cleared after the Glorious Twelfth, the grouse are in abundance and they are truly fantastic. Plump, tender and flavorsome, you can almost taste the heather.
Traditionally, game is hung to improve both the texture and the flavour, this works wonders with older, tougher birds, however these ‘early birds’ need no more than a couple of days and voilà…..perfection!
Served up with some braised red cabbage, bread sauce and crispy game chips they really are a meal fit for a king.
