Weekend Breakfast Idea: Crunchy French Toast
This is one of my favorite ways to make basic french toast more interesting. You can use any French Toast batter you like. The trick is dragging the bread through crumbled cereal before you fry it. It doesn't have to be simple corn flakes. I made a great batch with Honey Bunches Of Oats once.
One visitor to MrBreakfast.com said they used whole-grain bread, Special K cereal and replaced the butter with olive oil and it was still great topped with strawberries. I hope you like this recipe as much as I do.
Crunchy French Toast
(4 servings)
8 bread slices (preferably day-old)
2 large eggs
2 cups milk
1 teaspoon vanilla extract
2 cups crumbled corn flakes
butter - for frying
In a medium bowl, beat eggs, milk, and vanilla until well-blended. Melt butter (about 1 and 1/2 Tablespoons per batch) in a large skillet over medium high heat. Place corn flake crumbs in a shallow dish or bowl.
Dip each bread slice into the egg mixture and then dip into corn flake crumbs. Cook in buttered skillet until both sides are golden brown. Cut French Toast into diagonals and serve with your favorite syrup.
