Sucralose is a true breakthrough in food science, bringing us to an important crossroads. All over the world, people are seeing sucralose for what it is: the first sweetener ever developed that has no effect whatsoever on any part of the human body other than the tongue. It is so sweet (600 times as sweet as sugar) that I can improve the taste of Xtra ingredients with about 25 milligrams, when no amount of stevia or any other sweetener would work.To put this into perspective, 25 mg is a little more than a speck in the palm of your hand. Sucralose is chemically and biologically inert. Abundant research shows that only about 2% is absorbed, and that is easily and efficiently excreted in the urine. Sucralose sweetened beverages are now appearing on HEALTH FOOD STORE shelves because consumers want the tremendous advantage that sucralose offers. Zero calories. Zero impact on blood sugar and insulin. Great taste. No aspartame questions (Aspartame IS absorbed by the body). Recent research shows that sugar triggers overeating even in the absence of taste receptors. This suggests that the preference for high-calorie foods is based not only on the sweet taste, but biochemical signals derived from the caloric density of the food. Importantly, no such reaction was observed with sucralose.
