it is sad that many nutritionists are so uninformed on the science behind how food affects the body, especially long term. Animal product consumption is such a part of our society, it is going to be a long road to get people to even be open to the idea that it might not be healthy... not for the animals, or the environment, or themselves. And sadly I think its true that for many people, the pleasure of eating meat outweighs all of the disease, death and destruction it causes.

I was somewhat disturbed by Vilsack's comment about how they are "working hard" to solve the problem and make food safer...yet this is a guy who, according to Wikipedia (for expediency's sake), "...has repeatedly demonstrated a preference for large industrial farms and genetically modified crops; as Iowa state governor, he originated the seed pre-... Read Moreemption bill in 2005, effectively blocking local communities from regulating where genetically engineered crops would be grown; additionally, Vilsack was the founder and former chair of the Governor's Biotechnology Partnership, and was named Governor of the Year by the Biotechnology Industry Organization, an industry lobbying group." That's like asking the fox to guard the henhouse. How do you say you're trying to solve a problem when you were part of its creation? Factory farms are a blight and should be banned. I don't, however, have a problem buying small quantities of grass-fed beef from a local farm, which is what we do.

I don't feel any vegetables are essential, but rather that a variety are essential. I love celery, tomatoes, spinach, all types of lettuce, and many more, and eats tons a day. I'm usually down at least a head of lettuce + fixings.
