Don't have to finish the book to start eating plant-strong! Just pick some recipes and go for it. When you see how you feel you will be glad you did! Vacation may not be the best time to start, however.

I'm almost done with week 2. So far so good! Love the book, although I'll need a new one with all the cooking stains it's accumulating! : )
I'm eager to see the results later this month at my next visit to the M.D..

Please help me with a concern I have on the E2 diet which I am about to begin as a plant-based life diet is very appealing to me.
My fridge is now full of tofu and soy milk, etc.
But I went on the web today and am reading that too much Soy in one's diet can be dangerous--that it can cause types of cancer.

i'm married to a vegan and have many vegan friends and can offer a little bit of unofficial advice. when 'they' refer to too much soy, its usually along the lines of having soy milk in your cereal for breakfast, having a tofu heavy lunch and dinner, and sucking down lots of soymilk throughout the day. most of us don't consume enough soy to cause ... See Moreany concern. vegans have a wide array of food offerings that don't include soy, like seitan, tempeh and other meat replacers. as long as you keep your soy in moderation, you'll be fine (my husband is addicted to chocolate soy milk and fried tofu has yet to see any dangerous consequences in the last 16 months)
