I have been to QQ Noodle and Fremont and had great noodles. They were kind of standoffish about letting me watch but today we went to the Palace Chef also in Fremont on 4370 Thornton Ave
You can kind of see the guy making the noodles from your seat but of course I wanted to get closer so I asked the waitress if I could watch and she brought me in the back and I watched for about 10 minutes. This is the first time this has happened. The noodles were great too!

fudge was popular in the late 19th century in women's colleges. Sometimes cooked over the gaslight which hung from the center of the ceiling, it was used as the excuse for parties after "lights-out". These fudge recipes were given by Maria Parloa in a booklet distributed by Walter Baker & Co. in 1905

Vassar Fudge

2 cups sugar... See More
2 oz. unsweetened chocolate
1 cup light cream
1 tablespoon butter

combine sugar, coarsely chopped chocolate, and cream. cook over a moderate heat, stirring only until sugar and chocolate have melted. continue cooking until mixture reaches 238 degrees F. or until a few drops tested in cold water form a soft ball. remove from heat, add butter, and cool slightly until 130 degrees F. beat until fudge begins to harden, then transfer to a buttered platter. cut into squares before fudge is absolutely firm makes a little more than 1 pound.
