Nationality or gender does not matter at all in becoming a great chef. What matters most is who their master is. Just ask yourself what type of skill your chef has. Or, better yet, ask your chef who their master was. Training to become a sushi chef is traditionally long and hard...

One of the most important ingredients of sushi making is getting the freshest fish available. In Colorado, as a land locked state, many sushi bars do not have easy access directly to the fish market. We are one of the very first sushi bars in the United States to purchase one of a kind, unique fish directly from the fi...sh market in Japan. At Sushi Den/Izakaya Den, Koichi, our youngest brother, is stationed at one of the largest fish markets, Nagahama Fish Market, located in our home prefecture in the southern-most island, called Kyushu Island. At 4:00 AM, he carefully hand selects the freshest fish just unloaded from the boat, then within a few hours, the fish speeds its way to Denver, arriving within 24 hours.
Toshi who is our master chef for Sushi Den and Izakaya Den also goes to the local fish market at 7:00 AM in Denver 6 days a week, where he painstakingly handpicks the freshest fish available just for that day. We also source many exotic fish from Alaska, Seattle, Boston, Hawaii, Florida as well as from Philippines, Canada, Mexico, and Spain.

Sushi Den Toshi is the creative force behind the true sushi dining experience at Sushi Den. He is the master chef in both Denver and Japan. Toshi also makes a daily 7:00 AM trip to Denver's Japanese fish market 6 days a week.

Yasu, also a chef, oversees online communications, PR and marketing, and administration.

Michiko, Toshi's wife bakes all kinds of delicious gourmet cakes daily.
