    Dunkirk HomeBrew Wine season is just around the corner. Are your carboys empty from last year? It's been a warm and fairly dry summer. I'm hoping the grapes are going to be high quality this year. Was told yesterday, the grapes may be early this year. Some reports of grapes getting purple already. Excitement reigns.

      • Dale Hazelton Not enough there to do anything with. I do have some hops growing on top of another bush though. The flowers are quite small - when is the harvest on those, and is it possible to freeze them as I read somewhere?

      • Dunkirk HomeBrew dry them first... then freeze them. Make the packages as airtight as possible.

    Dunkirk HomeBrew Matt and I bottled up the second batch of Belgians on Saturday. FG down on both beers. Our original Belgian was 1.010, the second batch finished at 1.004. The Saison Blend was 1.018 on the original, and was down to 1.010 on the second batch. Both beers, both batches, tasted wonderful. Will doing an all grain Rye Pale A...le on Friday.       Dunkirk HomeBrew I hope those that wanted to got their beers and wines into the Chautauqua County Fair. I was told there were over 50 beer entries by 3:00 on Saturday. I took over 6 beers and 5 wines. Of course since I haven't gotten around to bottling wine yet, I took some 2008 vintage grapes. Good Luck to all who entered.

      Dunkirk HomeBrew The grapes will be ready to pick in 1 1/2 months. Do you have all of last year's wine bottled yet? I think I put up 5 gallons in bottles so far. Maybe I won't make quite so much wine this year. I got some currants this week. Pears ripen soon. Blackberries are coming in. Only 15 gallons of Niagara this year? 5 of Conco...rd. Need to pick up some California juices for the reds and obscure whites. Gotta cut back.

      Dunkirk HomeBrew Matt E. and I racked our second batch of dueling Belgians into secondary on Friday the 23rd. I didn't notice too much difference from the first round except maybe a little less fruity, a little more bready. Both should finish well. The first batch will have been in bottles 2 weeks this coming Friday. I am really hoping... that I can keep my opener off the stuff for another 2 weeks.

        Dunkirk HomeBrew If you missed the North Chautauqua Homebrewers Stink and Drink... well you stink. So did everyone who attended. My wife actually kicked me out of the house the day after... Too much garlic and black bean dip. (Is garlic and black bean dip supposed to be a vegetable side?) Said it was causing her to gag. I didn't know what she was talking about.

        Dunkirk HomeBrew Plan on brewing another all-grain version of the Belgian beers on Friday the 9th.... Saved the yeasts from each batch... Gonna do it again..... yeah!

        Dunkirk HomeBrew Matt and I just racked our Begian beer(s). Same batch, but two different yeasts. Our initial response... stunned silence. We're in secondary now for two weeks before bottling. The beers have some interesting fruity esters, a definite alcohol presence, a nice dry finish. The Saison 568 yeast seems to be a bit drier fini...sh than the Belgian 575, but similar flavor characteristics otherwise.

          • Dunkirk HomeBrew I'll pull out a couple of Vanilla Robust Porters for you as I don't know if this Belgian will be bottled quite yet. We dd have a little extra that I put in a growler. Don't know how good it will be next week.
