The texture isn't bad. That's actually the easy part. The part that'll take time is the flavor. It has to be strong, but invisible, if you know what I mean ;-) The base formula I have is the last one my father was working on, but it wasn't quite ready for prime time.

Another problem is that I'm having trouble finding fish that hasn't already been pumped with phosphates. A lot of times, they do that on board the ships before they ever reach land.

If you have any input on what types of seafood folks might want to use this on, I'm all ears. Right now, I'm working on a white fish/shrimp flavor.... Read More

FAB FAB works pretty well as a rub for ribs, it turns out. Just add it in addition to your regular rub in about equal proportions.
