Astronauts to return Galileo's telescope Replica brought on space mission to fete 400 years of discovery
FLORENCE - A replica of Galileo Galilei's telescope is headed back to Florence next month after travelling into orbit for a commemorative mission uniting the past and present of space exploration.
The telescope was re...created during a painstaking two-year project by
researchers from the Museum of the History of Science in Florence to
mark the 400th anniversary of Galileo's landmark discoveries.
In May, it accompanied astronauts aboard the NASA space shuttle
Atlantis on a mission to upgrade its ultramodern descendent, the Hubble
Space Observatory.
Mission Commander Scott Altman said bringing the two instruments
together connected the cutting edge of space exploration with its bold
beginnings in the hands of a Tuscan astronomer.
''Not since Galileo turned his telescope toward the sky in 1610 has any
event so changed our understanding of the universe as the success of
the Hubble Space Telescope,'' Altman said.
While in space, Altman and Italian-American mission specialist Michael
Massiminio used the telescope to peer out the shuttle's window at
Jupiter, the moon and other celestial bodies observed in Galileo's
treatise Sidereus Nuncius (Starry Messenger).
The telescope returned to Earth at the end of May after two weeks in
orbit and is due back in Florence on December 18 for a special
homecoming ceremony.
Both Altman and Massiminio will be at the city's town hall to return
the telescope, which rejoins exhibits at the Museum of the History of
Science.
Italian astronaut Paolo Nespoli will also be present together with
European Space Agency spokesperson Simonetta Di Pippo to discuss the
importance of continuing space flight programs. Galileo (1564-1642)
created his first telescope in 1608, based on descriptions from the
Netherlands where the device was invented.
He initially produced a lens able to magnify objects threefold and soon after created a lens with a magnification of 32.
This put him in a nearly unique position, as he was one of the few
people at the time with a lens powerful enough to observe the sky.
He started making regular recorded observations in 1609 and in 1610,
discovered three of Jupiter's moons. He initially thought they were
stars but observing their changing position, soon concluded they were
orbiting Jupiter.
Galileo later used his powerful telescope to observe the various phases of Venus.
Both sets of observations played a crucial role in his conclusion that
the sun was at the centre of the universe, rather than the Earth, as
was commonly believed at the time.
Church opposition to Galileo's sun-centred model flared up immediately in 1612 and would dog Galileo for the rest of his life.
In 1633 he was tried and convicted of heresy and a ban was imposed on
the publication or reprinting of any of his works. He was then placed
under house arrest, where he spent the remaining nine years of his life.
This fall the Vatican opened an exhibition dedicated to the one-time
heretic, who was rehabilitated in 1992 by Pope John Paul II who
admitted the Church had made a ''tragic mistake'' by rejecting his
views.
The exhibition was one of a host of events celebrating the United
Nations International year of Astronomy both in Italy and abroad.

Roasted Tomato Ricotta Bites
Makes About 18 Bites
For this recipe, I simply cut squares of puff pastry a little larger
than my muffin tins. I topped them with some fresh sheep's milk ricotta
that I mixed with fresh chopped herbs and then baked them until golden
and puffy. Once the ricotta bites cool, I top each with a half... of oven
roasted cherry tomato and a tiny dollop of basil pesto.
1 Roll Puff Pastry At Room Temperature1 Cup Fresh Ricotta1 Teaspoon Both Fresh Chopped Parsley And BasilSalt & Pepper18 Oven Roasted Cherry Tomatoes (See Below)1/4 Cup Basil Pesto (See Recipe Below Or Buy Store Bought)Preheat
the oven to 375 degrees F. Lightly grease the muffin cups. Cut the puff
pastry into squares slightly larger than you muffin cups and center one
into each cup. In a small bowl, mix together the ricotta cheese and
fresh herbs. Season with salt and pepper. Spoon a couple of spoonfuls
of the ricotta mixture into each muffin cup and then bake for about 15
minutes or until the ricotta has puffed and set and the pastry has
turned golden brown. Cool to room temperature. Carefully remove from
the muffin pan and place on a platter.Before serving top each bite with half a roasted cherry tomato and a tiny dollop of pesto. Serve
Roasted Tomatoes10 To 15 Large Ripe Cherry Tomatoes (Golf Ball Size)2 Cloves Garlic, Finely Minced1 Teaspoon SugarSalt & Pepper1 Tablespoon Finely Chopped Fresh Thyme (Or Herb Of Choice)1/4 Cup Olive OilPreheat
the oven to 275 degrees F. Halve the tomatoes, and place skin side down
on a baking sheet. Sprinkle over them the garlic, thyme, salt, pepper,
and sugar. Drizzle with the olive oil and place in the oven. Bake for
about one to one and a half hours or until they have shriveled yet
still remain moist. Cool, and use as desired.
Pesto SauceMakes 3/4 Cup (Reserve extra for otheruse)2 Cups Fresh Basil Leaves, Packed1/4 Cup Lightly Toasted Pine Nuts2 Large Garlic Cloves1/2 Cup Grated Parmesan or Romano Cheese1/2 Cup Extra Virgin Olive OilPlace
all the ingredients in a food processor except the oil, and pulse.
Start to add in the oil slowly, pulsing continuously until you have a
smooth paste. Use immediately to top any pasta dish. If you do not plan
to use it right away, store in a container with an additional layer of
olive oil on top to prevent discoloration.

Wait about 2 hours to rise and you have your bread ...dough ;
At this point do NOT use the electric machine to cook the bread.
Since I assume most of us do not have a wood firebrick oven in t he
house. The next best thing is the use of a pizza stone in a normal
oven. I have my pizza stone for over 10 years and I use it to make nice
crusty breads (bread does not cook well in a bread machine). Remove the
bread dough from the machine. Roll it up in some flower and shape it
any way you like. Cook it in the oven until done (Cooking time Depends
on thickness of the bread - Cooking average is 25 minutes at 450 F) .

A good news: SITUATION IN ITALY 'RELATIVELY' IMPROVED, FITCH SAYS:
(ANSA) - Milan, November 24 - The situation in
Italy following the global economic downturn has "relatively
improved" with regard to other European Union countries, the
international Fitch Ratings agency said on Tuesday.
"The outlook (stable) has not changed... and there is no cause
to downgrade its (AA-) rating," explained Marco Cecchi De Rossi,
managing director of Fitch Italy.
"The latest budget maneuver is neutral and has not had an
effect on Italy's
ating. And while there has been an evident
increase in the public debt, this was compensated by the very
high liquidity of the debt and the fact that interest rates are
low," Cecchi De Rossi told ANSA.
"Plus, the debt is being managed with farsightedness,
through long-term maturity dates," he added.
According to Fitch's top representative in Italy, the
Italian government "should take advantage of the occasion the
crisis has offered and carry out needed reforms, for example in
regard to unemployment compensation; completing needed
infrastructures; and reducing the time it takes for the central
government to reimburse local administrations".
"While these by themselves may appear to be minor,
together they can have a major impact. They will not create new
debt but instead make spending more efficient," Cecchi De Rossi
observed.
Looking at the credit situation in Italy, the Fitch
executive said that it was conditioned, but not in the short
term, by risk factors, known as rating triggers, "brought on by
the economy's low productivity which, in turn, was caused by
other factors like the low level of employment among women. This
has been the case for the past 20 years".
Turning his attention to the prospects for the Italian
economy, Cecchi De Rossi said "the recovery will arrive thanks
to greater investment and, in regard to demand, an upturn in
consumer spending. It is essential that these two fronts are not
discouraged".
"Consumer spending has been kept at sustainable levels
thanks to unemployment compensation," he added.

A special recipe fo you: salt cod ravioli with herbed butter sauce:
Ingredients For the filling:
1 pound skinless, boneless salt cod baccalà), rinsed well and cut into 1 1/2-inch pieces
1/4 cup extra-virgin olive oil
1 celery stalk, finely chopped
1/2 medium carrot, finely chopped
3 tablespoons finely chopped onion
1 cup whol...e milk
2 slices packaged sliced white bread, crusts removed, cut into 2-inch squares
1 tablespoon finely chopped parsley
Fine sea salt
Freshly ground pepper
For the pasta:
Fine sea salt
1 1/2 cups broccoli florets
2 3/4 cups unbleached all-purpose flour
1 large egg
1 tablespoon extra-virgin olive oil
For the sauce:
8 tablespoons unsalted butter (1/2 cup)
1 tablespoon mixed finely chopped fresh herbs, such as thyme, marjoram, parsley and chives
Fine sea salt
Instructions
To make the filling: Cover
cod with 2 inches of cold water in a large bowl and soak, chilled,
changing water 3 times a day, until a small piece tastes pleasantly
salty but not overwhelming, 1 to 3 days.
Drain cod and transfer to a 3-quart
saucepan; add 6 cups water. Bring just to a simmer; remove from heat.
Using a slotted spoon, transfer cod to a paper-towel-lined plate to
drain; reserve cooking liquid.
In a large skillet, heat oil over
medium-high heat. Add cod, celery, carrot and onion; cook, stirring
occasionally, until vegetables are softened, about 5 minutes. Add milk
and 3/4 cup of the reserved cooking liquid; bring to a simmer, reduce
heat to medium-low and cook until liquid is reduced to 1/2 cup and cod
is tender, about 30 minutes. Stir in bread, let soak for 1 minute, then
transfer mixture to a food processor; pulse until combined. Stir in
parsley; season with salt and pepper to taste.
To make the pasta: Bring
a large pot of salted water to a boil. Add broccoli and cook until
tender, about 3 minutes. Drain and let cool to room temperature.
In a food processor, purée broccoli
until smooth. In a large bowl, mound flour and form a well in the
center. Add broccoli, egg, oil and 1/2 teaspoon salt to the well. Using
a fork, gently break up yolk and slowly incorporate flour from inside
rim of well. Continue until liquid is absorbed, then knead until
smooth, about 4 minutes. Wrap dough tightly in plastic wrap and let
rest for 30 minutes.
Divide dough into 8 pieces. Rewrap 7
pieces in plastic wrap. Flatten unwrapped dough so that it will fit
through the rollers of a hand-cranked pasta machine. Set rollers of
pasta machine at the widest setting, then feed dough through rollers 3
or 4 times, folding and turning dough until it is smooth and the width
of the machine.
Roll pasta through machine,
decreasing the setting, one notch at a time (do not fold or turn
pasta), until pasta is smooth, thin and approximately 36 inches in
length. Dust pasta sheet with flour and transfer to a lightly floured
work surface.
Put 12 dots of 1 1/2 teaspoons
filling along center of dough, 2 inches apart. Roll another dough piece
through machine. Set second dough sheet over the first, then, using a
fluted pastry wheel, trim pasta along its length and cut between mounds
of stuffing into 12 (2 1/2-inch) squares; gently press down edges of
ravioli to seal. Spread ravioli onto a dry, floured baking sheet,
making sure they do not touch. Repeat with remaining dough and filling.
Bring a large pot of salted water to a boil.
To make the sauce: In
a small saucepan, heat butter over medium heat until melted. Stir in
herbs and generous pinch salt; remove from heat and cover to keep warm.
To serve: Add
ravioli to boiling water and cook until tender, about 2 minutes. Using
a slotted spoon, transfer ravioli to colander to drain, then transfer
to serving plates. Spoon butter over ravioli, sprinkle with pepper and
serve immediately.
