Gluten-Free Bay We have guests for Shabbos. Here's the menu for tonight: Butternut Squash Soup with Toasted Pumpkin Seeds - Pizza (Whole Foods Market Gluten-Free Pizza Crust) with Swiss Chard, Corn, Goat Cheese & Thyme - Green Salad w/Mango & Pomegranate Vinaigrette. Dessert: Organic strawberries, blueberries & unsweetened (or barely sweetened) whipped cream. Pull out the Lactaid!


Gluten-Free Bay The gluten-free babka did not rise enough but is absolutely delicious - oozing with chocolate! This is a real "Chocolate-Lover's Babka". Will post the recipe in a few days. The real test is how it will taste when it's totally cooled - Everything with chocolate is delicious while hot!

jessica: babka varies depending on cultures but the eastern european jewish version i've had before being gluten-free is usually a challah (dairy-less egg-based bread) dough twisted with chocolate and cinnamon and covered in a crumb topping.

Gluten-Free Bay Guess what I have in the oven? A gluten-free chocoate BABKA!!! And guess what it's not doing? It's not RISING. Ugh. Please think lofty thoughts to help my babka rise! I'll share the recipe if it turns out well. Who knows, it with that much butter it may be delicious even if it doesn't rise enough.

what do you mean "low residue diet" gail? i have lots of vegan recipes on my blog, go to glutenfreebay.com and click on "vegan" on the left hand sidebar. another wonderful resource is Karina's Kitchen: http://glutenfreegoddess.b logspot.com - Her newer recipes are free of a LOT of allergens including dairy, and are mostly very healthy.


Gluten-Free Bay Reposting an old recipe because it's garlic scape season! Here's a recipe for pareve, dairy-free, vegan garlic scape pesto. Yum, yum. Feel free to use parmesan instead of nutritional yeast if you have no reason to avoid dairy. Enjoy! (PS: If you've never tried garlic scapes, get thee to a farmer's market! They're amazing.)

Garlic scapes are so incredibly lovely and versatile - mostly I love mine cut up into more manageable pieces, simply sauteed in a little olive oil with salt and pepper.....mmmm

Was embarrassed that I'd never heard of it and at first thought it was a typo (scape??) but have decided that I'm happy to have discovered something new. Now, to try and find some!


Gluten-Free Bay I woke up with my TMJ so bad that I can't close my mouth fully on one side. Can you recommend any gluten-free (and kosher) foods that require minimal chewing??? I have breakfast covered, gonna make some Cream of Brown Rice, but I'm wondering about other meals. Thanks in advance.

I just had the most amazing cold strawberry soup. Put strawberries in blender, add some pineapple juice, blend. Voila! Measurements not necessary -- just add juice til you like the taste and consistency.

Thanks everyone. Some muscle relaxants and soft food really helped - I'm 95% back to "normal" (normal is very ABnormal, thus my need to get to a TMJ specialist ASAP). But I'm sticking to relatively soft foods for the time being. Pasta is okay, and well-cooked veggies, I've discovered. Your suggestions were very helpeful!

Gluten-Free Bay Out of curiosity, how many of you are kosher?

I hate to say it but I don't think there's any way that, objectively speaking, this is possible. There is onegluten-free adherence program run by a kosher org - The Orthodox Union (products marked "OU") helped creat the Gluten-Free Certification Organization which puts this logo on some foods: http://www.gfco.org/ If a food has that logo it ... Read Moreshould be quite free of cross-contamination. If a food is marked kosher for passover (or sometimes it will just have a P next to the kosher certification) it may also be made on GF equipment, though not always. But I can't think of any reason why your *average* kosher food product with neither Passover nor GF certification would be any more or less contaminated than any non-kosher food. But hey, if it's working for you, more power to you! :)

Sigh. I am currently in denial that I may also have a dairy intolerance and have silently wondered if that's the reason that the kosher parve ingredients have provided greater relief. Many thanks for all this extra info!

Ok I just did this recipe tonight.. I added the mandarin oranges chopped and some peanuts for crunch. Is so perfect !! Thank you for this great twist on a cole slaw---beautiful and delicious!

Gluten-Free Bay just ate tri-color Tinkyada brown rice noodles with EVOO, fresh ground black pepper, good grated parmesan, and asparagus slices that had been sauteed with shallots and garlic. Delish!

I love just how wonderful it feels to eat pasta - I certainly don't take it for granted anymore. We love all the Tinkyada pasta...even the gluten eaters in the family can enjoy eating GF.


Gluten-Free Bay I've been really enjoying salads made with romaine lettuce, goat cheese (very inexpensive kosher goat cheese from Costco), pears, pecans and balsamic vinaigrette. What kind of green salads do you enjoy in spring and summer?

The banana bread is SO GOOD I don't have the words to describe it. Totally fluffy, tender crumb, not crumbly or dense. Better than any banana bread I've ever had, GF or non-GF. It was incredibly moist for a dairy-free gluten-free dessert, too - Just as moist and fluffy the next day. Makes me want to try more recipes from this cookbook.

Maya: I never got a comment from you... hm... Sorry about that. You can bake almost any latke recipe. Just turn the oven up to about 375 or 400 and bake until crispy. I wouldn't try baking donuts, though. I know you can, but I think it kind of defeats the point :) My latke recipes are here:
