So.... I'm making my 2nd batch of chicken stock for T-day today...Chicken parts, mirepoix, garlic, bay, n water. I usually don't add the herbs til hour two or three. I thought about using fresh rosemary, thyme, sage, savory, and oregano, but forgot to get two packages while I was shopping and have to save it for the br...ine and to put into the cavity of "Tom".
Hmm... (light bulb!) Yummy Chicken Rub! .... Hell, I'm gunna sieve it through cloth anyway, so I wasn't worried about the small bits.

Knox's Spice Co. We had to cook the Beef Brisket in Kentucky, in the oven. It was great and will post pictures as soon as I return. I am still planning on cooking one on y grill and smoking with oak in the near future.
