I always freeze it - just cut it into chunks, cut off skin, boil down well (like you are doing mashed potatoes) drain well, mash and drain again. I usually freeze in one or two cup bags and then can take it out anytime to make a pie or bread! I have been doing it for years - freezes wonderfully just drain well!!

And although I didn't mention it and it seems obvious, scrape all the "guts" out like you are doing jack-o-lanterns first!

With the help of Mrs Wages, I made the best damn lemon cucumber pickles this far north of the Mexican border!!! Everyone loves how they are crisp and refreshing for a pickle.

I am making Pumpkin Butter right now in the crock pot. I had a bunch of pumpkins ready so instead of letting them ruin I am making Pumpkin Butter. It smells real good......too bad you can't can Pumpkin Butter............

i think you can- they do it at my mothers church. just the same as canning apple butter. for a good method try www.pickyourown.org and search for apple butter recipe after the recipe you'll see the method

Lost my tomato plants to the late blight as well. Harvested the green ones to ripen and hopefully they won't be affected by the blight!
