Nebraska Life Magazine Built in 1939 by the Civilian Conservation Corps, the Lake Minatare Lighthouse offers a stunning view to those who climb its winding staircase to the top. Last week, Christopher Amundson got a great view through a different approach. Being in “in the right place at the right time” led to a boom truck ride high into the sky for the perfect shot of this landmark. When you’re out exploring Nebraska, expect an adventure!

Nebraska Life Magazine People who choose to live in Nebraska are a hearty stock of people. This week's weather proved that point by bringing 18 inches of snow to Western Nebraska. Today, sun and balmy weather is returning to most of Nebraska. Many Western Nebraskans, like Donna Killham of Kimball, are watching through their kitchen windows as plows and street crews open roads for residents who've been snowbound for three days.

Nebraska Life Magazine Valentine’s Kyle and Otto Rosfeld have each found their calling, and they’ve proven that it needn’t be ranching…even if you live in heart of ranch country. Kyle is one of only a few authentic custom boot-makers in the U.S. His father, Otto, travels Nebraska singing, yodeling and storytelling. Christopher Amundson recently visited the duo and shot this video of Otto singing. Find the full story in our Nov/Dec issue.

I may be younger than most people that grew up with Roger Welsch. However, as a young child I recall going to see him in Sargent with my dad and Hoob (Grandpa). I enjoyed it very much!! Now don't ask me what the topic was but liked it.

Sometimes I enjoy Mr. Welsch's commentaries but did not appreciate his disdain for the southwest, particularly Arizona. I was born in Nebraska and try to visit at least once a year. But, I live in the desert southwest and it has own beauty. The reasons for living here are many and need not be defended. Mr. Welsch may need to experience other places just a bit. He can always go back to the place he loves best.

This is the time of year for making something with pumpkin.

A friend gave me this recipe a few years ago - and my daughter-in-law just told me today how much she loves this recipe.

PUMPKIN BARS... Read More

4 eggs
1 c. salad oil
2 c. sugar
2 c. pumpkin pie filling (I use one can)
2 c. flour
2 tsp cinnamon
2 tsp baking soda
1/2 tsp salt
vanilla

Beat eggs with salad oil and sugar till light and fluffy. Add dry ingredients and mix. Add pumpkin and mix.
Bake in greased 12X18 cookie pan.
Bake at 350 degrees for about 20 minutes, more or less depending on your oven.

Cool and frost with Cream Cheese Frosting*. Sprinkle with chopped walnuts or decorate with pumpkin candies.

*Cream Cheese Frosting

(This is the best cream cheese frosting I have ever made.)
2 8-oz packages cream cheese
1/2 cup butter
4 cups powdered sugar
3 tsp vanilla

Whip together till light and fluffy. It will take this much to frost the full cookie sheet.
