New Glarus Bakery Holiday Baking Tip #3. Want to know if your cake will rise? We all know that unless you bake more than once a week, baking powder will sit in our cabinets for a long time. Humidity kills baking powder, so you want to test it before using. Add a teaspoon of the baking powder to a coffee mug. Pour in a little bit of vine...gar. If rapid frothing occurs, your baking powder is good to go.

New Glarus Bakery Holiday Baking Tip #2. For lighter fluffier cookies, use half cake flour with the regular flour you buy at the store. More tender and lighter. Brings out the great butter flavor!

New Glarus Bakery Sorry haven't posted much lately. So much going on here. Christmas tunes are blaring in the back as we are busy making butter cookies. Next week we'll be making a couple more batches of our Stollen. Holiday Tip #1: Buy your cookies in advance and put into a freezer safe container and hide deep into your freezer. Pull the cookies out the morning to be served.
