Wildwood Restaurant and Bar Remove your Turkey from the refridge, let stand til room temp. Preheat oven as hot as possible. Set Turkey on rack with backside facing up, caramelize, turn it on it's side,caramelize. The other side, same. Flip the Breast side up and turn oven down to 325 degree, caramelize until Turkey reaches 150 degree/meat thermo...meter. Pull Turkey out , rest underneath aluminum foil. Happy Thanksgiving!!!
