Pamela's Healthy Pantry Skinny Egg Nog For each serving you will need: 3/4 to 1 cup skim milk 1/4 cup egg substitute 1/2 tsp vanilla extract 1/2 tsp cinnamon 1/2 tsp nutmeg 1 pkt Truvia Heat milk and egg substitute until almost boiling, add vanilla, spices and truvia. Simmer about 10 minutes being careful not to scorch the milk. Chill until cold, stir and serve.

Pamela's Healthy Pantry Soup weather is coming.That is good news if you are watching calories. There are lots of healthy soup recipes out there. But watch out....cream based soups are loaded with fat and calories...many soups have super high sodium levels. Don't be afraid to ask for that info in restaurants. Also don't assume that a soup by t...he same name is the same. Chicken tortilla, for example, can be cream based or broth based. Ask. :)

Good tip for the day! I love the cream stuff, unfortunately. However, I have my own very healthy chicken tortilla soup that's totally NON cream based. It's soooo good.

JoAnn...that is a great question. It is way better than Sucralose, which is the common name for the sweetener that is sold under the brand name Splenda. It is all natural, made from an herb called Stevia and a sugar alcohol derived from pears and grapes. It is great in cooking and baking, although you use more of it in that case than you do sucralose. It does not have the chemical aftertaste of other sweeteners either. Pamela's Healthy Pantry Whole Wheat Griddle Cakes 1 cup whole wheat pastry flour 2 egg whites 2 tsp. Extra Virgin Olive Oil 1/2 tsp. baking powder 1/2 tsp. baking soda 3/4 cup skim milk Mix all ingredients until batter is smooth. (you can adjust the skim milk amount according to what you like) Pour onto hot griddle, cook until bubbles form and pop, flip, cook until done.

It is important to use Whole Wheat PASTRY flour rather than just Whole Wheat flour. The pastry flour is a finer grind and will make a much lighter, fluffier product.
