We have found some
splendid mozzarella di bufala from a small artisan cheese maker, Caseificio
Olimpico in Aversa, Caserta
in the province
of Naples. They have
their own herd of buffalo
It will be hand made every
Wednesday morning then flown to Manchester
on… the same day. We should have it by lunchtime every Thursday so any true
mozzarella connoisseurs out there can get hold of a hunk of heaven soon. We
will also have a limited amount of fresh smoked mozzarella
and beautiful
Fresh buffalo and cows milk ricotta also made on the Wednesday. This Mozzarella is at
its best when eaten at room temperature.

After numerous visits from various judges the big
man himself rolled up for a meal. Gordon seemed pleased with his meal but we
shall see what he said on Tuesday!





Salvo’s were invited to cook in the f…inals in London
and Gip must have got a bit giddy as he put his roll of knives on his car
bonnet and drove off, losing, amongst others, his lucky carbon steel paring
knife he has had since college in '73.




Watch Gip and Sous chef Chris 'Jacko' Jackson as
they do 'culinary battle' with the other last Italian standing in the F Word
kitchen as they cook for 50 diners who decide if they pay for the dishes cooked
or not.



Does Gip make a pig’s ear of the pig and how fast
can Jacko get stuffed with his tortelloni. I wonder if we shall get to see the...
erm 'joy and excitement' on Gip and Jacko's faces as they learn the dessert
they will be preparing is to be made to one of Gordon Ramsey’s own exacting
recipes.
