Fly To Salento

Fly To Salento Legumes are well known for their precious healthy properties: they represent one of the main ingredients to characterize the Mediterranean Diet, a lifestyle, such an extraordinary natural tool to prevent cancer, heart diseas, etc. Strongly advised for children, legumes are an excellent source of vegetable protein and p...rovide the right balance of daily nutritional value.
Salento, an amazing area of Puglia, in Southern Italy, is home for so many different legume courses... just think of "ciceri e tria" (homemade pasta "sagne-tria", chickpeas "ceci", pieces of fried toast, extravirgin olive oil),or "cecamariti e muersi" (pea soup, turnips, garlic, small pieces of fried toast, extravirgin olive oil), "fave e cicorie selvatiche" (beans, wild chicory, extravirgin olive oil). Legume recipes mirror our old culinary tradition and way of living in Apulia, Southern Italy, a slow-living as authentic value: indeed they were most frequently used in the past by peasant people who cooked them into a clay pot "pignata".
In my opinion Grass-Pea "Cicerchia" is a very good alternative (though it is nowadays considered "old fashioned") to common legume dishes (lentils, peas, beans, chickpeas). Last week I found it at the Food Market in Lecce and decided to cook it in the traditional way: I left grass-Pea into salted water for a whole night and then, next day, legumes had a slow cooking (about a couple of hours) with one or two fresh tomatoes, onion, into a pot covered by one or two inches of water.
Lastly I think that wild chicory and a small "burrata" cannot be missing from this delicious course and extravirgin olive oil be imperative.

Heather 'Shambaugh' Szklarski

Heather 'Shambaugh' Szklarski I just read in Time (November 23,2009) about 'in-vitro meat'. I was wondering if anyone has heard about this...and what are your thoughts. My biggest concern right now is the actual nutrition value of meat raised in a 'nutrient' solution.
