Taxidermy I use sculpt apoxy and it takes a couple hours to set. But i set my eyes long before i even ready to mount the hide/cape. So it shouldnt matter either way but i feel its better to have it dry before mounting that way you dont have to worry about bumping the eyes and such. For the ears you can use a earliner, sculpt apo...xy or sculpting clay. sculpting clay is good because it dries with the skin rather than before it. I dont use mache unless i need to build an area up on the manikin and so on.

ha oh i've done quite a few mammals so practice but my advice is observe your specimen before you mount it so you know how far to set them in the manikin and also do a little molding around the top and bottom to act as muscle or browline. Ha i actually made these eyes for this deer mount i thought i would give it a go. turned out awesome just a lot of work.
