grains&more Baking a small batch of chocolate chip cookies. Seriously, the recipe makes only 8 cookies, it's great!

It's adapted from the book Small Batch Baking:

2 T plus 2 t butter (room temp)
2 T sucanat
2 T evaporated cane juice crystals... See More
2 T egg, well beaten
1/4 t vanilla
1/4 cup plus 2 T whole wheat flour
scant 1/4 t baking soda
1/8 t salt
1/3 cup chocolate chips

Cream the butter and sugars, mix in the eggs and vanilla, stir in the dry ingredients, then the chips. Bake at 375 for 8-11 minutes.
Note: Do NOT substitute coconut oil for butter in this recipe otherwise the cookies will spread.
