
The Food Nanny Minor crisis: we are out of bacon. Luckily this can be remedied. Makin' Bacon is easy just use use a ratio of 1:0.1:0.05 pork belly:salt:sugar. Weigh everything in grams and its a snap. Every kilo pork gets 100g salt and 50g sugar. Use any sugar you like ( brown, maple) mix the cure, apply, place in zip bag, flip ...every day for 4-6 days. Rinse & soak 20 minutes at end or cure time. Now cook, freeze, or smoke it.

The Food Nanny Things are hopping in the Community Supported Kitchen. Our New 28qt braiser is getting lots of action this week, and the whole house smells like cornbread: buttery and sweet. After a week off I confess to almost having stage fright when I stepped up to the range to begin yesterday. But then it was as easy as falling... off a bike. The Food Nanny Saturday night date: two sleeping kids, round two of guanciale done, onto the air dried ham, that tonight will come out of it's salt home, and will be hung from the rafters of our basement for the next 5 months to a year. First round of jerky set to go in the dehydrator. Fruit leather in the morning. Playing with fo...od and making food gifts is a great way to get back into the swing of things after a holiday.

The Food Nanny No FN today as we are taking the holiday week off. However, due to perhaps Circadian rhythms our children were rearing to go by 5am. So what will w cook for ourselves? Maybe some beans and escarole from the garden. Maybe chili with beef shank. I feel like in one day I have a world of opportunities ahead of me. Maybe we'll watch movies and get pizza.

The Food Nanny Market report: Second summer - tomaotes, peppers, squash - well winter squash. But still the most tempting T-day report came from a friend planning on making tamales and other dishes with fresh poblanos! Also I have to highly recommend BM's fresh spinach it is really exceptional: great full texture coupled with a swe...etness usually found only in winter greens. Check it out.

The Food Nanny Got a blog post up...and our new equipment arrived...Pasta maker for K's birthday, plus big storage units and food pans, a 28qt braizer (big shallow pot for stir fry, stews etc.) and thank heavens: stand mats for my knees. Only linemen shoud have to wrap their knees everyday before work. Yeah they make $, but on average they only make it to 52.

The Food Nanny Frozen food is rolling. Ravs - done. Soup - done. Pierogies - done. Cookies - done and quality checked. Everything else is prepped and waiting. Plus the new chest freezer (our third) arrived!

The Food Nanny Have you hugged a farmer today? They could have used it...a cold, cold morning at the market. But, just beautiful looking produce. Wide arrays of romanesco broccoli, cauliflower, kales, turnips, all catching the first rays of day and full of vigor in the chilly morning. Plus two fat turkeys!
