I wish Tal Ronnen would tell me how to make Gardein instead of telling me to go buy it. Other than that, it's a really pretty book with really delicious-looking recipes. I haven't tried to make any of them yet, though. I'll let you know how it goes.

I'm sure you could make your own seitan and use it as a Gardein replacement. Maybe blend and mix some of those ancient grains listed under ingredients and add it to the mixture?
