It’s possible to make a great version of Camembert without using raw milk.
Reynald

Reynald I bought the creme fraiche last week with the new packaging , what a disappointment!
The fresh cream has become so liquid , what's happened to the original recipe ?
Plus the new designer for container is horrible!

Karin I bought chevre at Trader Joe's today with the new packaging. It's reallly nice - the differences are subtle but so elegant. Great job!! The chevre is going into a fancy appetizer for a fancy dinner for tomorrow.... Yummy. (I got help from the Marion St Cheese Market staff on the wine pairing.)

Vermont Butter and Cheese Company Deep snow and slush didn’t keep New Yorkers away from the South Street Seaport and the New Amsterdam Market yesterday. VBCC’s debut at the market was well received thanks you to all our local friends who stopped by to wish us well. Shoppers munched on samples of sea salt butter cookies and bought butter and goat chee...ses like mad to prepare their holiday feasts. By 4 pm the skies were clear with a sun low on the horizon. We were left with crumbs, an empty cooler, cold fingers and toes, and gratified for New Yorkers love of good food.

Carol Rifelj The December issue of France-Amérique has an article
about where to get French products or their American equivalents in the U.S. Under
cheese, they write: “Il y a de fantastiques produits dans le Vermont
et le Wisconsin dont le chèvre Bonne Bouche [VtB&C

pour apprendre la méthode traditionnel.” Félicitations!
