I'd check with MOMA, as Danny Meyer took over their restaurants recently. He has a whole chapter in his book Setting the Table. And Wolfgang Puck is doing the MCA Chicago. They must do customer surveys. Also, Manask and Associates puts out a really good newsletter that should help. I do talk about food service in my comfort step. I'd be happy to email you that chapter if you don't have my book Creating Great Visitor Experiences.

I had not had Danny Meyer's book as part of my research, but checked it out this weekend-- very interesting. Lisa's point about most museums doing internal evaluation is very true. As I have had a chance to interview more staff at museums it is interesting to see how they... See More take on restaurant evaluation internally. I think it would be great if in some way more of this could be shared so museums facing changes can better see what worked for museums.
