        These two quotes summarize the issue.
        ...
        Farmers don't grow 'food' they produce 'commodities'. You can't eat a commodity till it is processed. Processing has been consolidated to reduce cost and improve profit. We as a country have demanded this over the last xx years so farmers and big grocery stores have responded.

        But this article highlights one of the many bad side effects of choosing price over value and quality.

        Very good news... People like Tisha are changing how people view food and are showing people that quality has more value than cheap. The tide is turning because I see it everyday at farmers markets just like Tisha's.
        The trend away from cheap processed to quality fresh, raw and local will end this issue.
        One year of 25% of the people switching to fresh will dismantle the current machine.
