Kelly Liken, owner/chef of Kelly Liken restaurant, and her mother Sue Liken, head to Cut: Artisan Meats & Seafood and Eat! Drink! in Edwards, Colorado to purchase supplies for their winter dinner. Cut manager Kevin Delonay walks Sue & Kelly through the store (dedicated to providing the highest quailty & freshest meats and seafood available) before the group settles on a freshly-trimmed pork loin. Drink! manager Lucas Jones guides Kelly & Sue through the world of zinfandels, while Eat! Cheese Monger Anders Willis aids with the selection of an American Bleu cheese for the arugula salad as well as a trio of olives from Sicily, Spain and Chile for hors d'oeuvres. The trip reaffirmed one of Kelly's guiding principles: Buying the freshest available products from local producers and vendors will lend a unmistakable authenticity to your meal.
The guests arrive for the winter dinner and Kelly prepares hors d'oeuvres of sauteed Sicilian, Spanish & Chilean olives four the group to enjoy over white wine. Before long, the dinner is ready and Kelly demonstrates the best practices for serving (& slicing) pork loin, while Sue Liken constructs the fresh Arugula salad, complete with the Liken Family's famous French dressing. Although they don't cook together often, Kelly tells Plum that she "grew up with a lot of awesome women cooking in the kitchen" and loves to share her passion with her mom.

About Vail/Beaver Creek
|
There’s a common expression among Vail locals: “Winter is great … but summer is why we live here.” Of course we love to ski and play in the snow, but the summer, with its perfect temperatures, jaw-dropping landscapes of wildflower and pine tree-adorned Rocky Mountains, is a true paradise.
