Last sunday when I was just back from Denmark, I also retasted a bottle of SJB 5 opened for 1 week and it was so good!!
The bottling has closed the wine, it's very normal, so it needs oxygen and time to recover. But I think that it's on the way and the wine is better and better day after day.
I also open a Danish cuvee tonight and it was the best day since the bottling. So we will able to enjoy it a lot soon as well.

La surprise fut plut... Read Moreôt bonne ! Le bouchon en verre est protégé par une "capsule de surbouchage", comme sur les bouteilles normales, ce qui permet de conserver le cérémonial. Et la capsule en verre rappelle effectivement l'univers du parfum. Mais on était également dans un restaurant de qualité et la bouteille était à un prix qui laissait entendre que le vin était d'un certain niveau (ce qui était le cas). Reste que l'effet était plutôt positif, moins "bêtement pratique" qu'une capsule à dévisser, qui rend le vin plus banal. Je pense que, même sans à priori, la capsule tend à limiter l'impact d'un vin. Même s'il est très bon, elle le rend ordinaire...

Oui c'est effectivement un peu mon avis et c'est pour ça que je m'intéresse de prêt au bouchon en verre pour ma prochaine mise en bouteille, car je ne supporte plus de bosser si durement pendant des années pour finir par un vin bouchonné ou oxydé, même avec des bouchons de 1er choix.
On en reparle...

Yes we enjoyed several old vintages here as well during the harvest. Nice to experience a vertical tasting. It permits to feel the benefit of aging those bottles.
