Cali Common is an esoteric style that doesn't allow for much wiggle room for personal interpretation. It baffles me to see so much variance when all that's needed is 2-row, c60, NB hops and Wyeast 2112. I like to add personal signatures to my recipes too, but the simpler the better with this one.

Several years ago, I made a Liberty Ale clone with Cascade hops from my back yard. Toasted the grains myself. One of the best I've made and it went fast!

This summer I made 10 gallons of a honey pale ale for my son's wedding. We drank it all the night before the wedding, about 60 of us, along with about 8 gallons of chile I made. Neither lasted long at all that night.

If possible book a Friday tour and make sure it's the last one. The whole brewery staff floats in and they usually keep the tasting room open pretty late. Be careful of the Barley wine on tap! Look out!
