We got an order of watermelon radishes in our SPUD box last week and it reminded me I promised you (or your twitterer) my latke recipe in time for Hannukah. Here it is:
2 large watermelon radishes or other very sharp radishes
1 onion
your choice of any five root vegetables you have around, eg.:
potatoes
sweet potatoes
parsnips
turnips
carrots (large)
Peel and grate root vegetables; peel and chop fine the onions (or, all can be processed with the large grating attachment in your food processor).
In a large bowl, beat four eggs. Add all vegetables and 1/4 cup flour. Mix together. the mixture should look a little damp so that it will hold together in the pan.
In a large pan heat at medium-high heat some canola or other cooking oil. You cannot use olive oil or butter for this as they will burn long before your food is cooked. Use plenty of oil. If you use too little oil the outside of your latkes will burn before the inside is cooked. (This is health food for your average 19th century Polish Jew: i.e. a high-fat mid-winter meal meant to help you pack on calories during the cold season.)
With a large spoon, e.g. a serving spoon or ladle, spoon vegetable mixture into the hot oil. Cook each side about 3 minutes or until golden brown. Serve immediately with toppings such as applesauce, sour cream or yogurt. If you leave off the sour cream/yogurt and use flax meal instead of eggs it works for vegans..
