This is easy! My kids are sitting on the couch watching PBS waiting to go to school and they all chimed in 'Your mini chocolate chip banana muffins!' which don't need milk or eggs and can be made gluten and nut free. They only take 10 min to put together, but take about an hour to cook (I need more mini muffin pans LOL!

Just yesterday I posted..."I am all out of butter and eggs. As long as I don't have to bake tomorrow for the challenge I should be okay". Hmmm. So, this morning I was thinking about what I could make after I read the challenge. I thought of pretzels dipped in chocolate. I have lots of pretzels and I store almond bark in the freezer. Then my daughter suggested peanut butter balls: 1 cup peanut butter, 1 cup honey, and 1 cup dry powdered milk. Mix together and shape into balls. Easy and good.
Yea, I will make them right now and then be done so I can hit the last day of some of the grocery store sales. What a fun and thought provoking week this has been. Thanks.

I used a brownie mix I had. I did not have a fat alternative so I used mashed up beans to replace the butter.

I need to buy powdered butter!

We celebrated this morning! Dessert Pizza for breakfast! With cookie dough from the freezer as well as strawberry cream cheese from the freezer. No kiwi or strawberries though, all we had were pluots, nectarines, dried cranberries and apple slices but we added some granola that made it pretty yummy!

This adventure has taught me I am by no means organized! I have a lot of the things I need but they are all over. But on the up side I know now we could make it. I think the big difference would be that if we were really facing a disaster all other things would stop, like; soccer, scouts, football, band, activity days, and my daily babysitting. In the end I have pages of notes and am glad I participated in the challenge. I have appreciated all the facebook posts because I learned new things to try and things I had overlooked. Thank you! Now I really need to go do some shopping and am totally going out to lunch today!

Today I made

CAKE BALLS
1 (18.25 ounce) package chocolate cake mix
1 (16 ounce) container prepared chocolate frosting
1 (3 ounce) bar chocolate flavored confectioners coating

DIRECTIONS
Prepare the cake mix according to package directions using any of the recommended pan sizes. When cake is done, crumble while warm into a large bowl, and stir in the frosting until well blended.
Melt chocolate coating in a glass bowl in the microwave, or in a metal bowl over a pan of simmering water, stirring occasionally until smooth.
Use a melon baller or small scoop to form balls of the chocolate cake mixture. Dip the balls in chocolate using a toothpick or fork to hold them. Place on waxed paper to set.
I just love those powdered eggs, they sure make cooking simpler, and as a side note, my silly 3 year old likes to eat the egg powder, she calls in yellow sugar (instead of brown sugar that she usually eats when I'm cooking). I have all the ingredients to make the cake mix and frostening from scratch but thanks to Albertsons sales I have lots of mixes in my storage, and since this is day 7 of the challenge and I am COMPLETELY wore out, I opted to use the easy way out.
Thanks so much for this AMAZING challenge, I have learned so much, and even more importantly my gratitude for the simple things in life has been drasticly improved. Thanks a million, you guys are the best.

Tonight I get to go to enrichment and eat dinner, for the activity they are baking bread, I think I will sneak out (I've had enough of the kitchen), and maybe I will sneak back into my house thru the back door, which is near my bedroom and go take a long hot bath with a good book, while my husband is watching the kids, and thinks I'm at enrichment. HA HA. Thanks again.

Wow I've learned so much this week. I sure take a lot for granted. Now thanks to Jodi and Julie and with some time I will be so much more prepared. Thanks for all your hard work. Your challenge was brutal - oh did I say that - I meant fun. I'm going to try to redo some of them in the future to see if I've improved. Well I don't know about you but I'm going shopping.

I did cinnamon rolls using peanutbutter in place of butter in the filling (my grandmothers secret ingredient), powdered eggs & powdered milk for the glaze on top.

However, I am really suprized I did not think of Rice Krispy Scotcharoos they don't call for any butter, milk or eggs. My husband also does a similar thing with Cherrios. He calls it Cereal Candy and just melts the chocolate on top no butterscotch chips.

Thanks for an easy last couple of days. I had to can pears yesterday which took up most of the day, and let stuff slow cook for dinner.
As for today, I always fall back on an easy cookie recipe I make with german chocolate cake mix--you can use others, and switch around ingredients. The mix, plus 1/2 cup instant oatmeal (I use regular sometimes--just makes them chewier), 1/2 cup veg oil (of substitute same amt. applesauce for lower fat and softer cookies), 2 eggs (fresh, powdered, or do the flax seed egg substitution) all mixed together. Stir in 1 cup or more chips (chocolate, pnut butter, semi-sweet, or white) and some chopped nuts if you like. Bake at 350 degrees for 9-10 mins.
This is good done with a spice cake mix and additions of your choice, as well.

Ok so because we still have birthday cake downstairs and the whole house is trying to lose weight I will not be making any more desserts while there is still some in house. I would probably make the rice krispie treats if I were or these yummy peanut butter bites.

Question for Jodi & Julie???

Are you going to make a link for all of these challenges on your website so people can easily access them in the future? In some ways this time of year is easier because of all the fresh fruit and veg in the garden. I really wonder how well I would do in winter or spring.

I am making a Crazy Chocolate Cake using no eggs, no butter, and no milk. ;) It is an amazing recipe I use when we have none of those on hand. I cant wait to get it in the oven, and out, so I can go get some food storage items and stuff from the case lot sale! ;) Thanks girlies!

Made another batch of the sour cream apple crisp that I made last night. We ate most of it and the small amount that was left I had with a bit of oatmeal at breakfast. Um....it's farily healthy stuff since it's mostly sliced apples, eggs, lite sour cream (today I had to use half sour cream and half plain yogurt), ground oatmeal and a bit of sugar. I'll have to post the recipe on my blog. You can make it with all fresh ingredients. Or replace them with storage items....rehydrated apple slices, egg powder, etc. I've tried it a few different ways. But I've never tried it with powdered sour cream so I don't know that would turn out.

I made oatmeal peanut butter balls (3/4 c. each: oats, pb, powdered milk, 1/2 c. honey, and 1 t. vanilla) which my kids love and are definitely considered a treat by my daughter who won't eat oatmeal any other way. Was anyone else thinking of the possibility of a real emergency taking place while we were practicing this week? I mean, I was getting a little wary knowing what I needed and with that list growing every day, and not being "allowed" to go out and buy it. And make sure you replenish the supplies that you used up this week, like the 72-hour kits and water storage!

You all have been so great Lots of new Ideas and things to try. I really want to get good at making bread. Well ladies I still have a sick child so I will have to read the discussion another time. Made triple brownies it just calls for chocolate cake mix, chocolate chips and chocolate pudding (used powdered milk)
surprisingly this was easier than I thought. Although the whole week has been an eye opener. I realize that there are still many many things to be done to be prepared for all situations. Thank you for the week.

thank you so much for doing this challenge, even though I know I was pretty prepared but still would liked to have even more of my items .....I was low on candles.....

thanks again

Well I really WAS out of all that stuff by the end of the challenge here! I cheated and made the same dessert I made for my boss dinner though, a pumpkin/oatmeal bake. It calls for milk and butter but I substituted coconut milk and coconut oil instead. It was tasty!

We celebrated by going out and restocking our fridge and by buying a new set of cordless phones. Ours died during the challenge. We didn't spend any money during the challenge though. I'm really proud of myself for that XD

I've really enjoyed the challenge. My "to-do list" printouts are full! It was really an eye-opening experience for me. Thanks gals!
