I have been making my own cider for several years, but this year we have got a couple of 40 gallon oak barrels for the first time. I need some advice on how to use them. We will be fermenting in brewing buckets and using the barrels for aging. They are ex whiskey barrels with a fantastic smell to them. The main questio...n I need answering is will we need to sterolise them or is the whiskey good enough for that? I do not want to lose the flavour if possible but rinsing with sodium metabisulphate shouldn't take too much away. any ideas?Read More
Ian Davis Just joined - Hello!. I've made cider for some years - 100% natural, no aded sugar or yeast etc. I had a go at perry last year with culinary pears, not a great success. I've just pressed a few gallons of perry pear juice. 2 questions - (1) Does it ferment at the same low temp as cider? (2) I'm told it likes to go off - should I add campden and yeast (I'd rather not unless I really have to)
